So, it has been a while since I have been on here. We have been busy with sports and work so by the time we get home I am ready to chill. I have been working more than I thought I would be lately. I am in a long term sub job right now. I will be working until Thanksgiving Break and then who knows from there.
As far as sports goes, we are a football and softball family. T has football every Tuesday night and M has softball practice Monday, Wednesday and games on Saturday. I am assistant coach for M's team so I have to be there for all of it. She is pitching and playing 3rd and does a good job at both. T is doing well in football. He is on the "A" team and gets to play some offense and defense. He loves it even though he gets bruised and battered. I must say I have enjoyed watching him play and am not so nervous anymore.

The Little Things
So, today we were going through the kids school supplies getting everything put together. Madison has a binder that we got her last year but she never used, so we are using it this year. As we are going through her binder getting odds and ends out she pulls out a piece of folded paper and hands it to me. It is a note that Memom had written to her. It talked about her playing softball and the last part of the note asked Madi to keep her in her prayers so she would have more time to spend with her and do fun things. It hurt so bad reading that and knowing that there will never be any more fun things done with Memom yet I am so happy that we found that note. What a special keepsake for Madi.

Something my family will eat!
So I am always looking for new things to make for dinner that my family will actually eat. I love cookbook's and it seems I am always buying new ones. One I have is called Classic Tex-Mex and Texas Cooking. It has some yummy sounding recipes in it but I have only made a few. This week it was Sunday-Chicken Casserole. I enjoyed it so I am going to share it with you.
5 boneless,skinless chicken breast halves, cooked, cubed
2 (8oz) cartons sour cream
1 (7oz) package uncooked, ready-cut spaghetti
2 (10 oz) cans cream of chicken soup
1 (4 oz) can mushrooms, drained
1/2 cup (1 stick) butter, melted
1/8 teaspoon black pepper
1 (8oz) package fresh, grated parmesan cheese
5 boneless,skinless chicken breast halves, cooked, cubed

1 (7oz) package uncooked, ready-cut spaghetti

1 (4 oz) can mushrooms, drained
1/2 cup (1 stick) butter, melted
1/8 teaspoon black pepper
1 (8oz) package fresh, grated parmesan cheese
- Preheat oven to 325 degrees. Combine chicken, sour cream, spaghetti, chicken soup, mushrooms, butter and black pepper.
- Pour into greased 9x13 inch baking dish. Sprinkle cheese on top. Bake, covered, for 50 minutes.
Now, I didn't add the mushrooms but that was only because the rest of the family wouldn't eat it if I did. Hope you enjoy!!

Blogging....is it for me???
Okay, so I have decided to try out this blog thing. It will be a great way to communicate and show off my kids if I actually do it. I need all kinds of help figuring this out so if you have any pointers please share :)!
